Smoked Mushroom Quesadilla and Quinoa

This vegetarian quesadilla is prepared with hickory-smoked mushrooms, layered with Fontina and mozzarella cheeses, white beans, Brussels sprouts, corn and a sprinkling of scallions. Wrapped in a flour tortilla and grilled before being served atop a bed of protein-packed quinoa.
