Salmon Skewers with Roasted Squash, Kale, Quinoa and Fresh Salad (Family Size)

Generous portions of Atlantic salmon filet skewered and roasted with butternut squash and cauliflower. Served with a warm blend of sauteed kale and steamed quinoa. A fresh spring mix salad comes tossed with dried cranberries, pumpkin seeds, with portions of feta cheese and lemon tarragon dressing on the side.

Note: This dish is served as hot and cold containers for reheating and can be dairy-free by omitting the feta cheese.
